Introduction

Welcome!

My name is Noël, and I am a tempeh enthusiast.

I like the taste, but I am also fascinated by the fermentation process. Therefore, I monitor the process with sensors and cameras.

On this webpage, I want to share my appreciation and show different aspects of tempeh.

Setup

I ferment in a commercially available yogurt incubator. Tin foil is taped on the transparent lid to block out light. Next to it, I installed a Raspberry Pi 4. This device controls all sensors, the camera, and the LED lights. I will talk more about the specific sensors in the data analysis notebooks.

Growth Tests

I do some experiments to learn more about the fermentation process.

Find out how I measure the heat development during the fermentation of chickpeas. Furthermore, we can see the fungal growth over time on the images.

In this run, I learn where the visual artifacts on the videos come from. I also attempt to measure the pressure that mycelium applies to the chickpeas.

Next, I evaluate the effect of peeling and splitting chickpeas on the fermentation result.

I explore methods for extracting growth curves from image data in the next few notebooks. First, I see what we can do with grayscale images.

Next, I demonstrate a method that utilizes filters for the color channels.

An alternative approach utilizes skimage's segmentation API.
